Decadent, healthy chocolate fudge

Look, I’m the first to admit that a lot of recipes that are gluten-/sugar-/everything-free and that claim to be healthy are often devoid of deliciousness. But this recipe is not only easy as pie, quick, and totally healthy, it’s also super delicious. This fudge will take you ten minutes to make, and it’s the perfect after-dinner dessert with some coffee or wine.
It’s also paleo-friendly which is great for us as we follow Tim Noakes’ eating plan.
All you need is one cup of coconut oil or coconut butter, one cup of either cacao or cocoa powder, half a cup of honey. Seriously. That’s all!
We used Nature’s Choice coconut oil which is R35 for 350ml. Cacao is much more nutritious than cocoa, so using cacao makes these next-level healthy. We also used creamed honey which I highly recommend. We added a pinch of Maldon sea salt which I would recommend, too. With the added salt these taste a lot like the Lindt dark chocolate with sea salt.
Melt the coconut oil/butter and the honey together on a low heat (they won’t combine). Stir in the cocoa/cacao powder and salt.
Pour this into a container lined with baking paper.
Pop that in the freezer for two hours and voila! Delicious, nutritious dessert. It really doesn’t get easier than that.
I’m definitely doing to make a salted version of this next time, sprinkling some sea salt on top before it sets. I’d also like to do the same with blueberries, and a version with chopped nuts and cranberries.
